⒈ 俗称制酒的曲。
⒉ 酿造米酒时，以曲与蒸米相混和，放入密闭容器中，加水并不时搅拌，经繁殖酵母及充分发酵，所得到未经过滤、混合渣滓的酒，称为「酒母」。因其含多量的酵母，故可酿造大量的醪。
